Adapted from a video on the NY times website:
- 3 cups flour
- 2 teaspoons quick yeast
- 1 teaspoons salt
- 2 cups water
- combine and rest for 4 hours in warm place (top of fridge?).
- coat with flour/wholegrains.
- place in cold/cool cast iron pot.
- then turn on oven to 200 deg celcius.
- cook in pot for 45mins with lid on.
- Increase oven to 250 deg celcius.
- remove lid cook for further 15mins.
